Gin Eva Bergamot

At the end of 2016 we were looking for a citrus orchard to grow yuzu. A very rare citrus fruit originally from Japan. Yuzu is very popular with many cooks because of its unique aroma. We wanted to distill a gin together with the German Michelin-star chef Benjamin Peifer and yuzu should be the most important ingredient next to juniper.

Luckily we found Franc, who grows all kinds of citrus fruits imaginable on his finca in Valencia. He specializes in very exotic fruits like yuzu, but also grows different types of blood oranges, lime and kumquats. Franc has very interesting clementine varieties and a very popular hybrid of lemon and orange called Meyer Lemon. He also grows bergamot, a hybrid of lime and bitter orange.

Impressed with the yuzu distillate, we asked Franc to send us samples of all his citrus fruits. After we tasted and distilled them all, the bergamot stood out. Bittersweet citrus, slightly zesty, long-lasting and more complex over time. We immediately fell in love with the distillate and only cuvéed it with a juniper spirit that we had distilled from Macedonian juniper. The biggest and sweetest juniper berries we've ever processed.
